Seismic Gas Safety for Restaurants and Commercial Kitchens
A commercial kitchen is one of the highest-risk environments for post-earthquake gas fire. Open burners, deep fryers, high gas loads, and continuous ignition sources sit in close quarters — often for hours at a time during service. Earthquake gas safety in a commercial kitchen setting deserves more attention than it typically gets.

Why kitchens are a distinct risk profile
Most commercial buildings have gas supply running to a boiler, water heater, or heating plant — equipment that may run intermittently and is often tucked away from people. A commercial kitchen is different. Gas appliances run for extended periods during service, often with open flames, and are positioned exactly where staff are working.
If an earthquake strikes during service, the ignition sources are already present and active. A fractured gas line or a dislodged appliance connection doesn't need to find a spark — the burner is already lit. This is the scenario that turns a structural event into a fire event within seconds.
Restraint helps — but it isn't isolation
Securing gas appliances and pipework against movement is good practice and, in many cases, a compliance requirement. Restraint reduces the chance that equipment topples or connections are wrenched apart during shaking.
But restraint doesn't address what happens if a connection fails anyway, or if shaking is severe enough to overcome it. Once gas is flowing into a space with active flames, the outcome depends on how quickly supply is cut — and that's not something restraint can do on its own.
Automatic isolation closes the gap
The Solid State Seismic Shutoff — MK6 detects ground acceleration directly and fires a relay output within 10 milliseconds of the set threshold being exceeded — well ahead of the destructive shaking that follows the initial P-wave. The relay holds for 8 seconds after the last exceedance, so continued shaking within the same event doesn't prematurely reset isolation and risk re-igniting a developing leak.
Because it's electronic — not a passive mechanical valve — the MK6 detects and records every event via its built-in counter, giving kitchen operators and building managers a verifiable log of activations for compliance and insurance purposes.
